Nuevo Baztán at FITUR with the culinary project “A Fuego Lento”

Within the framework of the International Tourism Fair, the Community of Madrid is inviting people to rediscover the region’s gastronomy through comforting spoon dishes, with the guide “Villas a fuego lento”.
This initiative has been presented, showcasing more than 50 culinary proposals that highlight local produce, tradition and a way of travelling that prioritises calm, flavour and hospitality. Among them are three restaurants in Nuevo Baztán.
The event was supported by the Minister of Culture, Tourism and Sport, Mariano de Paco Serrano, the President of Hostelería Madrid, and the mayors and representatives of the Villas de Madrid. A wide representation of restaurateurs also attended, showing unity to boost regional gastro-tourism.
The key points for our municipality from this presentation are:
- Global showcase: Nuevo Baztán’s culinary offer is promoted at FITUR as a fundamental pillar of its tourism appeal.
- A stamp of identity: the project highlights local produce and traditional recipes prepared with contemporary techniques, offering a set menu in participating restaurants.
- Institutional alliance: close collaboration between the Town Council, the Community of Madrid and the hospitality sector to attract new visitors.
With this participation, Nuevo Baztán strengthens its brand at the world’s most important tourism fair, inviting travellers to discover its Baroque heritage also through the palate. The restaurants participating so far are La Casa Vieja de Baztán, Mesón El Conde and Restaurante El Rincón de Loli.
